This recipe was originally found on a Pinterest board dedicated to easy recipes for college students. Their tag-line is “Easy recipes for college students on a budget, on a diet, new to cooking, or all of the above.” The link on this board led to the Recipe Girl website for these unique two-ingredient pancakes. Yes, two ingredients—bananas and eggs. I know what you’re thinking…not possible, right? But it’s true. I did try this recipe, and while it is a bit tricky, it’s definitely worth trying.
According to the Recipe Girl, there’s no “exact ratio” for bananas to eggs, but to get you started, here is what she recommends.
- ½ C well-mashed, ripe bananas (2 small bananas)
- 2 eggs
- Mix bananas and eggs in a medium bowl
- Heat a skillet to medium, and spray with nonstick spray
- Scoop about ¼ C batter onto skillet
- Cook until edges are dry (pancake will be thin)
- Flip and cook the other side briefly
- Repeat with remaining batter
You should be able to get four or five thin pancakes, serving one or two people. Suggested toppings include mini-chocolate chips, tiny blueberries, Nutella and strawberries, peanut or almond butter and honey, or maple syrup. Personally, I enjoy cinnamon in my pancakes, so I added a little to my mixture before cooking.
These pancakes, for me, were delicious with no toppings at all. My daughter, a fellow college student, enjoyed them as well. I also considered the possibility of trying the batter as a French-toast dip? (I haven’t tried that yet, but the idea has intrigued me and I plan to very soon – I need more bananas.)
